Day 7 - Gingerbread Cutouts

Prep Time:  30 Min
Servings: 3 Dozen

Ingredients
1/2 C. Sugar
1/2 C. Molasses  
2 t. Ground Ginger  
1 1/2 t. Ground Cinnamon 
1/2 t. Ground Cloves 
1/2 t. Ground Nutmeg
1/4 t. Ground Black Pepper
2 t. Baking Soda
1 Stick of Butter Cut Up
1 Egg Beaten
3 1/2 C. Flour



Directions
Preheat oven to 325.  In 3-quart saucepan, heat sugar, molasses, ginger, cinnamon, cloves, nutmeg, and pepper to boiling over medium heat, stirring occasionally. Remove saucepan from heat; stir in baking soda (mixture will foam up in pan). Stir in butter until melted. With fork, stir in egg, then flour. On floured surface, knead dough (add water if you need too) into a ball.  Cut dough in half.  Roll out 1/4" thick.  Use your favorite gingerbread man cutout and cut little men out.  Put on ungreased cookie sheet.  Bake 10-12 minutes at 325. Cool.  Decorate as your desire.

Little Men Everywhere! 
This is a tasty little treat. Gingerbread dates back to the 15th century, but it was Elizabeth I of England (in the 16th Century) that was the first to present these little guys in the likeness of some of her important guests.  I wonder if she bite the heads off of them like we did on Cody's cookies?  So anyway, these cookies are easy to make and pretty yummy.  They are crunchy on the outside, but soft and cakey on the inside. For us, that's perfect! We piped the frosting which was easy and fun to decorate.
